At La Fromagerie du Louvre, we believe that cheese is much more than just food: it is a story of terroirs, traditions and passion.

New generations of dairy farmers and cheesemakers are championing more environmentally-friendly farming methods, paying particular attention to animal welfare by respecting the seasonal nature of the animals, and reintroducing endemic breeds to our valleys.

Our aim is not only to enhance the value of this age-old work, but also to modernize it, by making our cheese dairy a responsible, contemporary enterprise.

OUR HISTORY

Meeting of the two Charlotte and genesis of the project: They will create an urban and inspired gin distillery
2021
Meeting with Nicolas and first thoughts about the Arbre-Sec Distillery, which takes place at 52 Rue de l'Arbre-Sec in the 1st arrondissement
2022
Signature du bail, un chantier géant nous attend !

Validation des processus de production, choix de l'alambic et lancement de sa conception
2023
Finalisation des plans avec l'architecte et début des travaux. Création des recettes et du concept des ateliers. Obtention des autorisations des douanes
2024
Démarrage de la production.

Inauguration de la distillerie en février et ouverture au public pour les premiers ateliers
